Ingredients: 5 eggs, 90 grams of low gluten flour, 60 grams of milk, 40 grams of corn oil, 70 grams of white sugar, and a few drops of white vinegar.
Method steps:
Step 1: Separate the egg white and yolk, add milk and corn oil to the yolk, mix well, sieve in low gluten flour, and stir to make a yolk paste.
Step 2: Add white sugar and vinegar to the egg whites, use an electric mixer to make a dry and foaming protein cream, lift the mixer so that you can see the right angle on the mixer head. The simplest method is to take a chopstick and insert it into the protein cream. If it doesn't fall, it's already done.
Step 3: Add the egg white cream into the egg yolk batter in 3 portions, quickly stir evenly, and stir each time without drawing circles to prevent the flour from gluten out and affecting the cake's growth. This step must be taken seriously.
Step 4: Flip over the mixed cake batter, make it delicate, and pick up the scraper to drip it into a triangular shape.

Step 6: Preheat the oven at 200 degrees Celsius for 5 minutes, change it to 150 degrees Celsius for 10 minutes, raise it to 160 degrees Celsius and continue baking for 40 minutes.
